Sugar (the proper term is sucrose, which breaks down into two components – glucose and fructose), is the most plentiful and economic sweetener. Sucrose can be found in many natural foods (e.g. fruits and vegetables) but can only be extracted economically from sugar beet and sugar cane. Sucrose is an important source of energy.

The rod is subjected to a process of preparation consists in breaking the cells of the stems. Then a conveyor belt leading to the mills, which performs the extraction of sucrose. bagasse leaves the last mill to chimneys, to use as fuel, bagasse or tank, where it is dispensed for use as material raw paper making.
The juice from the mills, passes to the tank, which lowers its degree of acidity. Alkalized juice is pumped to the heaters, which raises its temperature to a level close to the boiling point. In which solids settle and decanted. The settled solids pass rotary filters, which are covered with fine metal mesh that let the juice but retain the rum, which can be used as fertilizer in the plantations
Clarified juice then passes to the evaporators, vacuum operated to facilitate boiling at a lower temperature. This step will remove 75% of the water content of the juice, to obtain product or treacle.
The cooking of the syrup containing sucrose is carried out in vacuum pans. These brews will produce raw sugar (for animal production), white sugar (for direct consumption) or sugar for refining. Crystallization of sugar is a delayed process that increases industrial trash entering the dust grains of finely ground sugar
Sugar crystals are separated from the remaining honey centrifuges. These are very fine mesh cylinders that rotate at high speed. The fluid exits through the mesh and the crystals remaining in the cylinder, then washed with water. Honeys return to the bins, or used as feedstock for the production of ethyl alcohol in a distillery. Premium Sugar retained in the meshes of the centrifuges, dissolved in hot water and sent to the refinery for further processing. It should be noted that at this point you get what is called brown sugar, due to the color of the crystals, and then details the process by which becomes brown sugar, white sugar or fine sugar
By refining removes inorganic dyes or the liquor may contain. Sugar is dissolved with acid and calcium saccharate to form a compound which carries the impurities which are easily removed in the clarifier. The resulting liquor was concentrated, crystallized again at a bin and passed to centrifuges to remove the syrup. The Sugar obtained in the preceding stage so diluted with water until it became a syrup, the filter and passed to the refining cooking cans to evaporate the water and obtain again a syrup rich in sugar. Then centrifuged resulting honey moist sugar. Drying Refined sugar is washed with steam condensate, dried with hot air, is classified according to the crystal size and stored in silos for subsequent packaging
The export raw sugar comes directly from the centrifuges to the storage silos. There is bulk cargo on tractor-trailers that take you to the port or is packaged in 50 kg bags for use in the manufacture of animal feed concentrates. Refined sugar is packaged in presentation of 5, 500, 1000 and 2500 grams, 50 and 100 kg and even tons.
